A New Addition
One of our dipping cabinets, which had faithfully kept our ice cream cold and presentable for most of our 35 years, abruptly died last week without notice. We knew it might be time for an all-out replacement, but we wanted to see if we could fix the old one first. We called the great refrigeration guys from DGS to come out for a service call and once here they let us know that, sadly, it was time for a new one.
Big enough for 28 drums of hard ice cream and controlled digitally, the new dipping cabinet arrived in the back of a truck, attached to wooden palettes weighing over 600 pounds.
Getting the cabinet up the stairs and into place in the shop was one of the more formidable challenges we've faced over the years (though not quite as daunting as facing a crowd on a busy night when we've run out of mint chip). There was a moment when we thought we weren't going to be able to get it up the flight of stairs.
Thankfully, the delivery crew persevered. We're grateful they did—the new dipping cabinet boasts much larger windows, making it easier for everyone to see our flavors, especially little kids.
