Every season, we get the crew together for an appreciation breakfast to say thanks for the tremendous hard work that goes into manning the operation day in and day out. There's plenty of food, giveaways, and time for a group picture. This year, 27 of the roughly 50 Authorized Dippers we have on staff made it to the main event.

Emma's work has inspired us to ask kids of all ages to submit creations of yours truly (Skipper Dipper!) for the chance to see the works featured on our Facebook photo gallery and/or in the shop. Place your first name, age (for kids under 18), and hometown on the bottom corner of the work, and drop it off in the shop. We will cherish the works, and unfortunately we cannot guarantee their safe return -- whipped cream and sprinkles are delicious but they go everywhere -- so let us know if you want them back.

A Skipper Dipper Ice Cream Cake adds a delightful, extra special touch to any party or BBQ. For over 30 years, we’ve been making our cakes daily in our store– so we know they’re always fresh and tasty. Here’s a glimpse behind the scenes of the making of one of our cakes.
Step 1: Build Vanilla Foundation Layer
First, we freeze our cake pans to ensure that the ice cream will stay frozen as we prepare the ice cream layers. Using Vanilla Soft Serve, we then create the base layer of the cake, filling the bottom half of the pan. The pan then goes back into the freezer to firm up before the next step, adding the middle layer of crunchies. FYI - our cakes come in multiple sizes to accommodate any size crowd: in 7”, 8”, and 9” round, and small and large sheets.
Step 2: Add Delicious Cake Crunchies
We’ve heard customers refer to this stuff as “edible gold” and we know why. A combination of ground chocolate cookies and chocolate hard shell, it takes an ordinary cake to a whole new level. After the vanilla foundation has had sufficient time to freeze up, we then layer this rich chocolatey goodness on top before adding the next layer of ice cream. It then goes back into the freezer for more firming.
Step 3: Chocolate Top Layer
After the chocolate crunchies have rested, the final layer to our ice cream cakes is chocolate soft serve, which is added on top of the chocolate crunchies. It is smoothed out to prepare the surface for icing.
Feeling adventurous? We can make all of our cakes with any flavor of soft serve in our shop – with over 36 flavorings – the possibilities are endless.
Step 4: Icing
After freezing the cake overnight, we release the cake from its pan and ice the next morning. We use the same icing common in key lime pies.
Step 5: Decorate
Once the cake is iced, it is time for decorating. Our cake decorator pipes the borders of the cakes, writes custom inscriptions and adds confetti sprinkles to finish it off.

We’ve exclusively used Zeroll Professional scoopers in our shop since we first opened our doors on July 4th, 1978. In fact, the vast majority of the Zerolls we bought in ‘78 are still in service today over 33 years later. (The others were taken by some of our Authorized Dippers in a bit of unauthorized memento collecting.) To allay any concerns right away, we're the same Skipper Dipper you've come to know and love over the years, and Skipper hasn't changed hands: we're still owned and operated by members of the founding family.
Our goal in refreshing the sign was primarily for consistency between the interior and exterior -- but we struggled with the decision to update the sign knowing that we might alienate our regular patrons who revere the playfulness of the original sign. We feel that we've arrived at a look that captures the magic of the original -- fun, whimsical, and above all, happy -- which are also collectively the values that Skipper Dipper aspires to in all of its messaging.
We'll let you be the judge, but we hope you'll be pleased with the design as well.
And when we're feeling nostalgic about Skipper Dipper's early days, we've kept the original sign faces safely in storage for a walk down memory lane.
We're proud to introduce our latest t-shirt style for 2010, a throwback number that we're calling Island Pride -- a super sporty design in summer red and white which one Facebook fan commented "I like it - very '80s - Olympic-y". This design marks Skipper’s first time designing and producing something where we're not necessarily front and center but on the sleeve. We thought the island's t-shirt offerings could use a retro design just like this, and we hope you agree. Made by American Apparel in the US of A and available in all adult sizes in store and on the T-shirt Shop on our website.
Skipper Dipper is now making waffle cones and bowls from scratch every day, several times a day for the freshest taste and crunch.
If you've had the luck of being in our shop when we're making them, you've experienced that extraordinary smell. We've been told by patrons that they could smell them well down the block and even across the street.
For the remainder of the weekend, we'll be open from 11a to 11p on Saturday, May 1st, and 11a to 9p on Sunday, May 2nd.
We're featuring several specials to celebrate our first weekend of the season, including a Chocolate Birthday Cake and Rainforest Crunch.

Skipper Dipper -- an LBI ice cream tradition since 1978 -- opens for our 33rd season on Friday, April 30th.
We'll be hiring throughout the months of April, May and June to fully staff our shop for the summer.
We're looking for super people people who thrive on teamwork in a fast paced and fun atmosphere.
We will be conducting in store interviews the weekends of April 10th/11th and April 24th/25th, and every weekend in May before opening full-time on Memorial Day for the season.
